The Science of the Window
BBQ is ready when the meat says it's ready. Things like humidity, wind, and the specific marbling of your cut can swing a cook time by hours. That's why I always tell folks to aim for a **Window**, not a specific minute.
Big B's Rules for Timing:
- 1Always Add a Buffer: If the calculator says 4:30 PM, tell your guests 5:30 PM. It is much easier to keep a brisket warm in a cooler than it is to explain why dinner is two hours late.
- 2The Resting is Non-Negotiable: A long rest (1-4 hours) is what separates good BBQ from legendary BBQ. It allows the muscle fibers to relax and the internal juices to redistribute.
- 3Watch the Stall: Around 160°F (71°C), the meat will stop rising in temperature as it "sweats." This is normal. Don't panic and crank the heat; just wait it out or use the Texas Crutch.
