Internal Temp
The temperature measured inside the thickest part of the meat with a probe, used to judge doneness more reliably than cook time alone.
Pit temp tells you what the cooker is doing. Internal temp tells you what the meat is doing. Use a leave-in or instant-read probe in the thickest spot, away from bone and big fat pockets. Time charts are estimates. Tenderness and temp together decide when you pull.
